Plural\u2014yes. For our soils and vineyards are not all alike. Each possesses its own unique characteristics, ranging from soil type and exposure to microclimate, factors that influence grape ripening and determine the precise, most opportune moment for harvesting each specific variety.<\/p>

Consequently, the entire harvest cycle at F\u00e8lsina can span more than two months. It typically begins in August with Sangiovese, Chardonnay, and Pinot Noir (destined for our sparkling wine bases), and concludes well into October with Cabernet Sauvignon.
The grapes are harvested strictly by hand, as is the subsequent selection of the individual clusters.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t

Identity, respect, precision: these are our guiding principles in the cellar, values we strive to instill in the fruits of our harvests, shepherding them through the process as naturally as possible. Optical sorting systems and cooling technologies bring the grapes to their ideal processing temperatures, while yeast strains are carefully selected to suit the specific character and unique attributes of each individual wine. Vinification takes place in stainless steel tanks, a medium that allows us to clearly discern and interpret the subtle differences between individual vineyard parcels, soil types, and vintages.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t
