A journey back in time to discover a wine that has spent 10 years in contact with the lees, while preserving the distinctive minerality and freshness that have always defined our traditional-method sparkling wines. Time gives it a unique and unmistakable personality. The label bears the initials S.T., which stand for Sboccatura Tardiva — Late Disgorgement.

Denomination: Quality Sparkling Wine
Method: Metodo Classico.
Varietal: 60% Sangiovese, 20% Pinot Noir, 20% Chardonnay.
Growing area: Northeast of Siena, in the commune of Castelnuovo Berardenga, on the southern border of the Chianti Classico denomination.
Vineyard density: About 5.400 vines per hectare.
Training system: Guyot.
Harvest: Exclusively by hand into small boxes.
Ageing on the lees: 10 years.
Dosage at disgorgement: no added sugar.

After careful selection, the grapes are gently pressed. The resulting must is cold-settled, racked and fermented at a controlled temperature. Bottling takes place in spring, with the addition of sugar and selected yeasts to initiate the second fermentation.
After 120–122 months of ageing in the bottle, disgorgement is carried out, followed by the addition of the liqueur d’expédition.

Straw yellow with golden highlights, bright in appearance, with a very fine and persistent perlage. The nose is intense, fresh and complex, with prominent floral and dried fruit notes, complemented by aromas reminiscent of pastry and croissants.
On the palate, it is dry, savoury and well balanced, with excellent acidity leading to a long, lingering finish with notes of candied fruit.
