
VIN SANTO OCCHIO DI PERNICE
As a result of one of the oldest winemaking methods in the Chianti area, Vin Santo Occhio di Pernice takes its name from the colour Sangiovese takes during the drying process. Felsina’s Vin Santo signature flavour is handed down through the years from one caratello to another via the “mother” (the starter). During the maturation process and bottle refinement, the wine further develops its personality. Excellent when paired with traditional artisanal panforte and chocolate-based desserts. It complements blue cheeses and can stand up to quirky matches such as glazed duck breast.

Varietal: 100% Sangiovese
Growing area: Southeast of Siena, in the municipality of Castelnuovo Berardenga, on the southern boundary of the Chianti Classico production area, from the Valli and Poggiolo vineyards.
Vineyard density: About 5.400 vines per hectare.
Training system: Simple Guyot.
Harvest: Exclusively by hand into small boxes.
Vinification
After careful selection, the bunches undergo natural drying on racks until December, and sometimes until January or February of the year following the harvest. After pressing, the must is transferred to sealed 100-litre oak caratelli together with the madre, the dense sediment from previous vintages.
After 7 years of ageing in the vinsantaia, the wine undergoes at least 6 months of bottle ageing before release.
Sensory Profile
Golden yellow with copper highlights. The nose reveals aromas of dried fruit, peach, apricot, pineapple and tropical fruit.
On the palate, it is rich and smooth, with elegant fruit notes beautifully integrated with the oak of the caratello. A remarkably well-balanced wine, with a vibrant acidity harmoniously complemented by a measured residual sweetness. Good persistence on the finish.
