

Harvests.
Plural—yes. For our soils and vineyards are not all alike. Each possesses its own unique characteristics, ranging from soil type and exposure to microclimate, factors that influence grape ripening and determine the precise, most opportune moment for harvesting each specific variety.
Consequently, the entire harvest cycle at Fèlsina can span more than two months. It typically begins in August with Sangiovese, Chardonnay, and Pinot Noir (destined for our sparkling wine bases), and concludes well into October with Cabernet Sauvignon.
The grapes are harvested strictly by hand, as is the subsequent selection of the individual clusters.
Vinification & Maturation.
Identity, respect, precision: these are our guiding principles in the cellar, values we strive to instill in the fruits of our harvests, shepherding them through the process as naturally as possible. Optical sorting systems and cooling technologies bring the grapes to their ideal processing temperatures, while yeast strains are carefully selected to suit the specific character and unique attributes of each individual wine. Vinification takes place in stainless steel tanks, a medium that allows us to clearly discern and interpret the subtle differences between individual vineyard parcels, soil types, and vintages.

Further, meticulous attention is devoted to the selection of barrels—including their dimensions—as well as to toasting methods, and to the transfer of the wine from one vessel to another.
At Fèlsina, winemaking is a process positioned in constant balance between technical expertise, experimentation, and attentive listening. Every choice is guided by the aim of conveying into the bottle authenticity, coherence, and a true sense of territorial identity.

EVOLUTION.
The historic stone-and-brick cellar, nestled within tuffaceous rock, was joined in the early 1970s by a new underground facility designed to ensure optimal conditions for both cellar work and wine ageing.
These spaces are equipped with machinery and instrumentation capable of fully enhancing our distinctive winemaking style. Small and large wooden casks, alongside concrete and steel tanks, complement the invaluable expertise of Fèlsina’s technicians, winemakers, and cellar master.
