
LECCIO DEL CORNO
An ancient Tuscan variety originating in the Chianti area, today mainly grown in the olive-producing regions of Central and Northern Italy thanks to its resistance to low temperatures. The tree is moderately vigorous, with a spreading growth habit and dense canopy, and produces oval-shaped fruit. Ripening is late and gradual.
At Fèlsina, it is produced in limited quantities under the special “Collezione Privata” label. Bright green in colour, the oil offers good aromatic intensity and complexity, with notes of fresh grass, tomato leaf, artichoke and fresh almond. Elegant and harmonious on the palate, with vegetal and
spicy notes and a pleasantly persistent finish. Bitterness and pungency are beautifully balanced.
Recommended with Mediterranean dishes, salads, pulses and vegetables. Excellent drizzled raw over traditional Tuscan pappa al pomodoro.

Pressing
After harvesting, the olives are separated from the leaves through defoliation and washed under running water. They are then conveyed to the crushing stage, using either a hammer mill or a destoner.
The resulting olive paste is transferred to the malaxer, where malaxation takes place at a controlled temperature of 25°C, with processing times varying according to the vintage and cultivar. The paste is then processed in a decanter, where centrifugation separates the oil from the vegetation water and pomace. The oil is subsequently filtered.
